Chocolate Peppermint Muffins

Check out these bad boys! Craving sweets? Satisfy that craving with these minty chocolate muffins made with great ingredients. I found this recipe on the Beachbody blog - they have tons of great recipes!


Serving Size: 1 Muffin
Recipe makes 12 Muffins

What you need:

  • 1 (15 oz) can chickpeas, drained, rinsed
  • 3 large eggs
  • 1/2 cup raw honey
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 3 tbsp coconut oil, melted
  • 1/2 tsp pure peppermint extract (make sure to not put in more - it can be overpowering)
How to get it done:
  • Preheat oven to 350 degrees
  • Prepare 12 muffin cups by lining muffin paper or coating with nonstick cooking spray and set aside
  • Place chickpeas, eggs, honey, cocoa powder, baking soda, coconut oil, and peppermint extract in blender or food processor and blend until smooth
  • Place better in a medium bowl
  • Divide batter among 12 prepared muffin cups
  • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean
  • Cool completely and enjoy!
