Recipe makes 12 Muffins
What you need:
- 1 (15 oz) can chickpeas, drained, rinsed
- 3 large eggs
- 1/2 cup raw honey
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 3 tbsp coconut oil, melted
- 1/2 tsp pure peppermint extract (make sure to not put in more - it can be overpowering)
How to get it done:
- Preheat oven to 350 degrees
- Prepare 12 muffin cups by lining muffin paper or coating with nonstick cooking spray and set aside
- Place chickpeas, eggs, honey, cocoa powder, baking soda, coconut oil, and peppermint extract in blender or food processor and blend until smooth
- Place better in a medium bowl
- Divide batter among 12 prepared muffin cups
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean
- Cool completely and enjoy!
